In my ongoing efforts to be healthy and stay fit, I am always searching for new recipes.

Here is my regular recipe for pancakes or waffles. Just add no-sugar-added syrup, a dab of butter and some fresh berries.

  • ¼ cup Ground Flaxseed Meal
  • ¼ cup Ground Almond Meal
  • ¼ cup Ground Quinoa Flour
  • ¼ cup Whole Wheat Flour
  • 1 Generous Teaspoon Baking Powder
  • ½ Teaspoon Salt
  • 1 Egg
  • 2 Tablespoon Canola Oil
  • 1 Cup of Milk

Whisk the dry ingredients together.

Whisk together the egg and oil, then add in the milk and whisk again.

Using a wooden spoon, mix the dry and wet ingredients and let sit for a minute or two before cooking. (Make your coffee.)

This recipe makes enough for two people, but scales up well for more.
